- Wash, peel and cut along the onion.
- Place vinegar, onion, laurel, spices, 150 ml of water, salt in a pan.
- Boil the marinade, cook for 5 minutes.
- Wash the celery stalks, cut into pieces of 5 cm.
- Put the vegetable in a pot with marinade.
- Keep on fire until the liquid boils.
- Close the lid.
- Cook for 10 minutes.
- Remove the vegetable from the marinade.
- Put it in jars.
- Add olives.
- Strain the marinade and bring it to a boil.
- Pour into jars.
- Roll containers with lids.
Important! Pickled celery can be served to the table, seasoned with olive oil and pepper.

- Prepare the brine: put salt and sugar in boiling water, cook until the components are completely dissolved.
- After cooling, add vinegar.
- Wash the celery stalks, cut into 1-2 cm slices and dry.
- At the bottom of each sterile jar, lay 3 garlic cloves and 1 bay leaf.
- Celery petioles placed in containers.
- Pour in the brine.
- Cover the jars with lids and place in a large bowl with boiling water for sterilization.
- After 35 minutes remove the container.
- Roll up with sterile caps.
- Turn the cans upside down.
- Wrap with a blanket or plaid.
- After cooling, move to storage.

- Clean hard threads and hard areas.
- Depending on the purpose for which the stems are harvested, they can be frozen whole or cut into pieces of various sizes.
- Blanch the stems for 2-3 minutes.
- Fold in a colander and quickly place in ice water.
- Remove celery from water and drain.
- Place the pieces on a horizontal surface covered with a towel, for 1 hour - to dry.
- Move the vegetable to a cutting board and lay it in one layer, excluding the contact of the pieces.
- Cover the raw material with cling film and place in a freezer with a temperature of –18 ° С.
- After 2-3 hours, remove the frozen product, put it in vacuum bags, or in plastic containers and place the packaged vegetable in the freezer.
Home storage
Pickled celery should be stored in a refrigerator in closed containers for 2 months. Storage of canned product should be carried out at a temperature of 0 ° C to + 20 ° C and air humidity of 75%, in the absence of sunlight. The maximum shelf life is 2 years.
Frozen product is suitable for consumption for 10-12 months. It is stored at a temperature of –18 ° С.Important! Frozen celery cannot be re-frozen. After thawing it must be consumed on the same day.
